Description

We're going to be making a classic carbonara pasta, featuring creamy eggs, crispy pancetta, and freshly grated Parmesan cheese. This dish is made by tossing hot pasta with a mixture of eggs and cheese, allowing the heat to create a silky sauce, then finishing with pancetta and a sprinkle of black pepper.

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta cooks, heat a skillet over medium heat and add diced pancetta or guanciale. Cook until crispy, then remove from heat.
  3. In a bowl, whisk together eggs and grated Parmesan cheese until well combined. Season with a generous amount of black pepper.
  4. Once the pasta is cooked, reserve a cup of pasta water and drain the rest.
  5. Quickly add the hot pasta to the skillet with pancetta, tossing to combine.
  6. Remove the skillet from heat and immediately pour the egg and cheese mixture over the pasta, tossing quickly to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  7. Serve immediately, garnished with additional grated Parmesan cheese and a sprinkle of black pepper.
