Odin's Carbonara
Description
We're going to be making a classic carbonara pasta, featuring creamy eggs, crispy pancetta, and freshly grated Parmesan cheese.
This dish is made by tossing hot pasta with a mixture of eggs and cheese, allowing the heat to create a silky sauce, then finishing with pancetta and a sprinkle of black pepper.
Ingregients
- Spaghetti or fettuccine pasta
- Pancetta or guanciale
- Eggs
- Parmesan cheese
- Black pepper
- Salt
- Olive oil
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta cooks, heat a skillet over medium heat and add diced pancetta or guanciale. Cook until crispy, then remove from heat.
- In a bowl, whisk together eggs and grated Parmesan cheese until well combined. Season with a generous amount of black pepper.
- Once the pasta is cooked, reserve a cup of pasta water and drain the rest.
- Quickly add the hot pasta to the skillet with pancetta, tossing to combine.
- Remove the skillet from heat and immediately pour the egg and cheese mixture over the pasta, tossing quickly to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- Serve immediately, garnished with additional grated Parmesan cheese and a sprinkle of black pepper.
